Ajwain has a very strong smell and is good for health. Ajwain seeds is good for cold, asthma, weight loss and even for acidity.
My maternal grandma would always soak these ajwain seeds in warm water and for 15 minutes and drink it daily. She passed away four years back, and while writing this post, it brings back her memories.
You can make this paratha like Methi Paratha, Traingle Paratha and Methi Thepla – just by combining all the ingredients, rolling out the dough and cooking it on hot tawa. Another method is this preparation where the parathas would turn out to be layered and flaky.

Whole wheat flour – 2 cups
Ajwain seeds/carom seeds/omam – 2 teaspoon
Pepper powder/milagu thool – 1/2 teaspoon
Asafoetida/hing/perungayam – 1/4 teaspoon
Oil or ghee – 2 teaspoon + as required for brushing the dough
Water – as required
Salt – as required or 1/2 teaspoon
Note. The ingredients shown will vary with the original quantity.
1. In a large mixing bowl, add whole wheat flour, ajwain seeds, pepper powder, asafoetida, oil or ghee and salt. Then add water little by little, and combine well to form a soft pliable dough. Cover the dough and set aside for 20 minutes.2. Divide the dough and make medium-sized balls. Dust the ball with wheat flour and start rolling it into your desired shape using a rolling pin. If you wish, you could sprinkle little flour on top of the rolled parathas.3. Once you roll out the dough, pleat the rolled dough inwards and outwards into folds (i.e.) pleat into a long strip. 4. Apply/brush oil on the folded dough.5. Now roll the dough in a circular motion. Start rolling it gently into round shape using a rolling pin.6. The rolled dough should be in medium-thin thickness.7. On a hot pan, put the rolled paratha and once you see the bubbles appear, spread oil on the parathas. Flip the paratha, spread oil and cook until few brown spots appear. Using a ladle, press the paratha on the corners. Switch off.Now, flaky and layered Ajwain Paratha recpe is ready! Serve hot with Raita or Pickle.
