Aloo Baingan Recipe, Potato Brinjal Curry. A simple and delicious dish made with boiled potatoes, sliced brinjal and simple seasonings. Aloo Baingan goes well with Rotis and also as an accompaniment to rice.
Aloo Baingan is a very simple and easy dish to make. Half the work would be over when you boil the potatoes and slice the brinjal. Now since I have started working, I make this curry often and it make my life easier. I can serve Aloo Baingan with Rotis as well as as accompaniment to rice. It goes well with both.
My kids like potatoes but not brinjal. When I make this dish for our family, my kids will eat just the potatoes alone. My elder one is starting to like brinjal, so that is even more better for me now.
I have made this Aloo Baingan in a typical South Indian way. Very soon I will post the North Indian version of Punjabi Aloo Baingan.

Baby Potatoes (boiled and peeled) – 4 nos.
Brinjal (medium-sized, sliced) – 1 no.
Tomatoes (finely chopped) – 2 nos.
Garlic (finely chopped) – 4 nos.
Green Chillies (slitted) – 2 nos.
Cumin Powder/Seeraga Thool – 1 teaspoon
Coriander Leaves/Kothamalli – 2 tablespoon
Salt – as required
Oil – 2 tablespoon
Mustard Seeds/Kadugu – 1/2 teaspoon
Fenugreek Seeds/Vendhayam – 1/2 teaspoon
Red Chilly/Kanja Molaga – 1 no.
Note. The ingredients shown will vary with the original quantity.
1. In a pan, heat two tablespoon of oil, and then let mustard seeds splutter. Then add fenugreek seeds and red chilly. Now add garlic cloves and saute for few seconds. Then add the brinjal slices. Saute for a minute.2. Now add potato cubes and cook for four minutes in medium flame. Then add the chopped tomatoes and cook for a minute.3. Add cumin powder, salt, and green chillies. Stir well and cook covered on low flame for ten minutes.4. After ten minutes, the veggies and brinjal would be well cooked. Finally, add the coriander leaves and give a quick stir.
Now, Aloo Baingan/Potato Brinjal Curry is ready! Serve hot with Rotis or as a side to Rice.
