Apricot lassi recipe – A creamy and delicious yogurt-based drink made with Apricot.
Apricot has got so many health benefits. Apricot is rich in vitamin A, potassium and has high fiber. It is available during May till July. Whenever I buy apricot, I either make smoothie or jam. This time I thought I’ll make apricot lassi. I prefer fresh apricots to dried ones. Dried apricots lose their water content because of the drying process that they goes through. If you have apricots and curd/yoghurt at home, you could make this apricot lassi. Apricot has a sweet flavor so if you even add less sugar, it will taste good. A super tasty and refreshing smoothie!

Apricot – 2 cups (halved and pitted)
Fresh curd/yoghurt – 1 cup
Water – little less than 1/4 cup
Honey – 1 tablespoon
Note. The ingredients shown will vary with the original quantity.
- Use apricots that are plumpy and also golden in color.
- Use fresh curd/yoghurt.
- You can also add 1/2 cup of ice cubes.
- You can add a pinch of cardamom powder or a drop of vanilla essence.
