Beans mezhukkupuratti recipe or kerala beans stir fry – A simple and easy kerala style fry made with beans.
Beans mezhukkypuratti is a very easy and common dish made in kerala. The same recipe can be made with many veggies like carrot, raw plantain, yam etc. It is very similar to our beans poriyal. In this recipe, we use coconut oil and stir fry beans in the onion garlic paste. You can serve this beans stir fry with cooked rice, dal and even sambar. I am sure you will all like it.
Beans (chopped) – 1 and 1/2 cup
Salt – as required
Small onions – 7 nos.
Garlic cloves – 4
Red chilli – 1 no.
Turmeric powder – a pinch
Coconut oil – 1 and 1/2 tbsp
Mustard seeds – 1 tsp
Curry leaves – a sprig
Note. The ingredients shown will vary with the original quantity.
1. Grind the ingredients given under “to grind” to a coarse paste. Set aside.
2. In a pan, add beans with enough water (say 1/4 cup) and salt and cook covered. Once the beans are cooked and the water is absorbed, set aside.
3. Heat one tablespoon of oil in a pan, and then let the mustard seeds splutter. Then add curry leaves followed by the ground paste.
4. Cook the paste until raw smell leaves and then again add half tablespoon of oil followed by the cooked beans. Stir well till the beans get combined well with the beans. Cook for two to three minutes and switch off.
Now, beans mezhukkupuratti is ready! Serve with cooked rice, dal or sambar.
