Cabbage thoran is a famous side dish of Kerala that goes well with steamed rice, kerala sambar and even curd rice. It is very similar to cabbage stir fry. You can make thoran using veggies like carrot, ash gourd, raw banana etc. It is very simple and easy to make.

Cabbage (medium-sized, grated) – 1
Small onions (finely chopped) – 4 to 5 shallots
Curry leaves – 10 nos.
Green chilli (chopped) – 1 no
Turmeric powder – 1/2 tsp
Asafoetida/hing/perungayam – a pinch (optional)
Coconut (grated) – 1/2 cup
Salt – as required
Coconut oil – 2 tbsp
Mustard seeds/kadugu – 1 tsp
Cumin seeds/jeeragam – 1 tsp
Note. The ingredients shown will vary with the original quantity.
1. Heat oil in a pan, and let the mustard seeds splutter. Then add cumin seeds and let it sizzle. Now add the onion and fry until it turns transparent.
2. Then add green chillies and curry leaves. Saute for a minute and then add turmeric powder and asafoetida. Stir well and then add the cabbage. Reduce the flame to low, sprinkle little water say 1 or 2 tablespoon, cover the pan and let the cabbage cook.
3. Stir occasionally and once the cabbage turns transparent and soft, uncover the pan. Add salt.
4. Once the cabbage is cooked, add the grated coconut and saute well for 2 to 3 minutes. Switch off.
Now, cabbage thoran is ready! Serve with steamed rice, sambar or any variety rice.
