Every weekend, we will buy Burrito from Chipotle and that our family’s favorite dish. Though I know to make burritos at home, I still love Chipotle’s burritos. Earlier, I have always wondered how they would make cilantro lime rice and spanish rice. I learned to make spanish rice later, but still wondered how to make this Chipotle Cilantro Lime Rice.
I was talking about this to my friend Vanessa, and her look at me made me understand that it is not very difficult to make. She taught me this recipe and it came out almost exactly like Chipotle cilantro lime rice. So burrito and Chipotle lovers, here comes the recipe of the famous Cilantro Lime Rice.
Basmati Rice – 2 cups
Bay Leaf – 1 no.
Cilantro/Coriander Leaves (Chopped) – 2 tablespoon
Garlic Cloves – 5 nos.
Lemon Rind – 1 tablespoon
Lime Juice (Fresh) – 3 tablespoon
Salt – 2 and 1/4 teaspoon
Note. The ingredients shown will vary with the original quantity.
1. In a large pan, bring water to boil and then add rice, bay leaf, cilantro, garlic cloves and salt. Add grated lemon rind and cook covered for 10 to 12 minutes or until rice is cooked.
2. Once the rice is cooked, take out the garlic cloves and add lime juice. Finally, gently fluff it with fork.
Now, Chipotle Cilantro Lime Rice is ready! Serve hot.
- You can even use long grain rice.
- You can stir fry the rice in a tablespoon of butter and then add water and bring it to a rolling boil.
