Drumstick leaves/murungai keerai – 2 cups
Eggs – 2
Red chilli powder – 1 tsp
Salt – as required
Oil – 1 tbsp
Mustard seeds/kadugu – 1/2 tsp
Urad dal/ulutham paruppu – 1/2 tsp
Red chillies – 3
Note. The ingredients shown will vary with the original quantity.
1. Heat oil in a pan, and add mustard seeds. Once mustard seeds splutter, add urad dal and red chillies. Then add the washed drumstick leaves and cook for a minute. Then add chilli powder and cook for another minute.2. Sprinkle 1/4 cup of water and let it cook until the water gets evaporated. 3. In medium flame, break the eggs and add them to keerai along with salt. Stir well until the eggs get scrambled.4. When the scrambled eggs gets combined with drumstick leaves, switch off.Now, drumstick leaves eggs stir fry is ready! Serve it with sambar or rasam.
