Its been a long time since I posted egg recipes. This time, I thought l will post a rice recipe made with boiled eggs – Egg Pepper Rice. I made this for lunch yesterday, and all of us liked it. So here is the recipe of Egg Pepper Rice.

Rice (cooked) – 2 cups
Eggs (boiled, cut each egg into 4 pieces) – 4 nos.
Onion (chopped) – 1 no.
Tomato (chopped) – 1 no.
Ginger Garlic Paste – 1 teaspoon
Turmeric Powder – 1/2 teaspoon
Pepper Powder – 1 teaspoon
Mustard Seeds – 1/2 teaspoon
Curry Leaves – 1 sprig
Ghee – 4 teaspoon
Oil – 5 teaspoon
Salt – 1 teaspoon

Note.The ingredients shown will vary with the original quantity.
1. Heat oil in a pan. Let the mustard seeds splutter, and then add the onions. When onions turn transparent, add Ginger Garlic Paste.
2. When the raw smell of Ginger Garlic Paste goes away, add the chopped tomatoes. Saute the tomatoes for two minutes.Now add turmeric powder and salt.
3. Stir well and then add the egg pieces and cooked rice.
4. Stir gently such that eggs don’t break.Now add pepper powder and stir gently. Lastly, add Ghee and give a quick stir gently.
Now, Egg Pepper Rice is ready! Serve hot with Raita.
