Eggplant Parmigiana Recipe, Eggplant Parmesan. An Italian comfort dish where eggplant slices are shallow fried and then layered with marinara sauce and cheese.
Gj took me to Olive Garden restaurant for my first bday after our wedding. This is the first time, I tasted this delicious Eggplant Parmigiana. It tasted so good and I just loved it. Since then whenever we go to Olive Garden, we would order Eggplant Parmigiana and Chicken Marsala.
My friend is very good in making Italian dishes. She came to know that I love Eggplant Parmigiana and Chicken Marsala. So, she taught me to make this Eggplant Parmigiana last week. I loved her recipe so much.
Eggplant Parmigiana is quite easy to make. I am pretty sure that your family will like it.

Large eggplant/brinjal – 1 nos. (around 10 slices)
Eggs – 2 nos.
Breadcrumbs – 2 cups
All purpose flour – 2 cups
Marinara sauce or tomato sauce or pasta sauce – 4 cups
Mozzarella cheese – 1/2 cup
Parmesan cheese – 1/2 cup
Extra-virgin olive oil – for shallow frying
Salt – as required
Note. The ingredients shown will vary with the original quantity.
1. Slice each eggplant into 8 pieces about 1 and 1.5 inches thick. Place the eggplant slices on a tissue paper. Season each eggplant slice with salt on both the sides and set it aside for 30 minutes. After 30 minutes, the eggplant slices will sweat and leave little droplets of moisture. Blot off the excess moisture with a second tissue paper. Once you have removed the excess moisture, place them on another tissue paper.2. Heat oil for shallow frying. Take a bowl, add eggs and little water. Beat the egg and water together. In another bowl, add some breadcrumbs.3. By this time, the eggplant slices would have released more moisture. Wipe the excess moisture off. In another mixing bowl, add all purpose flour and little water and make a thick paste. Dip the eggplant slice in the all purpose flour mixture.4. Now, coat the eggplant slice in the egg mixture and bread crumbs. Then shallow fry in the oil.5. Once the eggplant slices turn golden brown, flip them over and cook the other side too until they turn golden brown. Drain the fried eggplant slices on a paper towel.6. Preheat the oven to 425 F. In a baking pan, spread the sauce and then layer the fried eggplant slices in a single layer on top of the sauce. Again, spread the sauce on top the fried eggplants.7. Then sprinkle mozzarella and parmesan cheese on top. When the oven is preheated, place the baking pan inside the oven. Bake for 15 minutes or until the cheese is melted. Switch off.Now, Eggplant Parmigiana is ready! Serve hot.
