Gujarati dal recipe. A healthy and comforting dal made with toor dal, ground nuts and mild spices that has myriad flavors – both sweet and sour.
Gujarati dal is very simple to make and requires mostly pantry ingredients. Some days when I am lazy, I would make this gujarati dal and serve it with rotis and hot cooked rice. It is a perfect dish to make whenever you are in a hurry to get a meal on the table.
As a finishing touch, you can drizzle few drops of ghee on the gujarati dal just placing it before the dining table.

Toor dal – 1/2 cup
Peanuts (raw) – fistful
Tomato (finely chopped) – 1
Jaggery – 1 and 1/2 tablespoon
Green chillies (slitted) – 2
Ginger (finely minced) – 1 inch
Red chilli powder – 1 tsp
Turmeric powder – 1/4 tsp
Lemon juice – 1 and 1/2 tbsp or amchur powder – 1/2 tsp or dried kokum – 2 pieces or tamarind paste – 3/4 tbsp
Coriander leaves (chopped) – 2 tbsp
Salt – as required
Oil or ghee – 1 tbsp
Mustard seeds/kadugu – 1/2 tsp
Cumin seeds/jeeragam – 1/2 tsp
Fenugreek seeds/vendhayam – 1/4 tsp
Asafoetida/hing/perungayam – 1/4 tsp
Dry red chillies – 1 or 2
Cinnamon stick – 1 inch
Bay leaf – 1
Curry leaves – 1 sprig
Note. The ingredients shown will vary with the original quantity.
1. Pressure cook toor dal using a cup of water. I have taken the below picture from my another post. Once the pressure releases, open the cooker and mash it up well.2. Add raw peanuts, ginger, green chillies, tomatoes, turmeric powder, jaggery, salt, and three cups of water to the mashed dal. Simmer the flame and cook for 10 to 15 minutes until the tomatoes turn mushy.3. Meantime, heat oil or ghee in a small pan. Let the mustard seeds splutter. Then add cumin seeds, fenugreek seeds, red chillies, bay leaf, cinnamon stick, curry leaves and asafoetida. Once cumin seeds sizzle and fenugreek seeds turn brown, switch off. Seasoning is ready!4. Add the seasoning to the simmering dal and mix well. Switch off. Now add lemon juice and stir well. Garnish with chopped coriander leaves. Now, gujarati dal is ready! Serve hot with steamed rice or rotis.
- Mash the dal well. Gujarati dal should be watery and not quite thick like our usual sambar.
- Gujarati dal should have myriad of flavors like sweet, tangy, and spicy. You can add more jaggery for sweetness. Likewise, you can more green chilli for spiciness and lemon juice for more tanginess.
- Once you add the lemon juice, do not cook the dal for more than a minute.
