Kara Kuzhi Paniyaram Recipe, Kara Paniyaram
Kara Kuzhi Paniyaram is one of my favorite recipes but I do not make it often at home. Whenever I have very little leftover idly dosa batter at home, then I make this Kara Kuzhi Paniyaram. I feel it is time consuming. It tastes so good when you have Kara Kuzhi Paniyaram along with Onion Chutney and Idli Milagai Podi.
Each person would easily have about minimum of ten Paniyarams. So, I always think it is a time consuming process. It is one of the easiest and tastiest dishes you could do in ten minutes of time. I wanted to post this recipe for a long time and finally made this Kara Kuzhi Paniyaram last Friday and took pictures very quickly. Gj was very hungry, so I did not want have time to take good pictures. However, I have tried my level best. Hope you all like it.

Idli/Dosa Batter – 3 cups
Rice Flour – 1/2 cup
Onion (finely chopped) – 1 no.
Green Chillies (finely chopped) – 3 nos.
Salt – to taste
Mustard Seeds – 1/4 teaspoon
Gram Dal,Kadalai Paruppu – 1 teaspoon
Curry leaves – 2 sprigs
Oil – as desired
Note. The ingredients shown will vary with the original quantity.
1. Heat a pan with two teaspoons of oil. Add mustard seeds and let it splutter. Then add chopped green chillies and gram dal. Once gram dal turns golden brown, switch off the stove.2. In a mixing bowl, add the idly dosa batter, Rice Flour, curry leaves, chopped onions, seasoning (mustard seeds, gram dal, green chillies), and salt. Combine well. Heat the panorama pan and add few drops of oil in each mould.3. In medium-low flame, pour the batter with the help of a spoon in each mould till they are 3/4th full. Let it cook for 2-3 minutes. Turn the paniyaram in each mould upside down with the help of a stick or spoon and let the other side also cook for 2-3 minutes. Add few more drops of oil if needed. The paniyarams should turn golden brown. Insert a clean toothpick and if it comes out clean, then the paniyarams are cooked. Transfer the paniyaram to a container and then repeat the same with the rest of the batter.Now, Kara Kuzhi paniyaram is ready! Serve the Paniayarams with Onion Chutney.
