Mushrooms – 1 cup (cut each mushroom into four pieces)
Ginger (finely chopped) – 1 and 1/2 inch
Garlic cloves (finely chopped) – 4
Cumin seeds/jeeragam – 1/4 teaspoon
Chilli powder – 1/4 teaspoon
Oil – 1 tablespoon
Salt – as desired
Note. The ingredients shown will vary with the original quantity.
1. Heat oil in a pan and add the cumin seeds. When the cumin seeds splutter, add ginger and garlic. Cook in high heat for five seconds and then add mushroom pieces. Add chilly powder and salt. Stir well for 3 to 4 minutes in high flame.
2. When the water from the mushroom evaporates, switch off the gas, and empty into a bowl immediately otherwise mushroom will turn soggy and overcooked if it remains in the hot kadai.
