For sweet sauce
Thin coconut milk – 2 cups
Thick coconut milk – 1 cup
Coconut (grated) – 2 tsp (optional)
Cardamom powder/elakkai podi – a generous pinch
Sugar – 3/4 cup
Note. The ingredients shown will vary with the original quantity.
1. In a non stick pan, add milk, water, ghee, salt, and rice flour. On low heat, mix well and the mixture will start thickening.2. Once water evaporates and dough becomes thick, switch off. Set it aside and let it cool a little. When you are able to bear the heat, add sesame oil to the dough and knead well. Cover the dough with a wet cloth to prevent it from drying.3. Grease your fingers with sesame oil. Pinch a small portion of the dough and form a ball or cylindrical shape. Do the same for the remaining dough.4. Set the shaped balls aside. Now, bring thin coconut milk to a boil. 5. Once the milk has come to a boil, add the balls little by little. Do not add all the balls at once. Let it cook for 5 minutes. Then add cardamom powder and sugar. Mix well. Simmer the flame, and cook for 2 minutes.6. Add grated coconut and cook for a minute. Switch off, and then add thick coconut milk. Stir well.Now, paal kozhukattai is ready! Serve warm.
- Instead of sugar, you can add a cup of powdered jaggery.
- Once you add coconut milk, do not boil as it will curdle.
