Pavakkai roast recipe, crispy bitter gourd roast recipe
Pavakkai is my favorite veggie. I know for some of you it may sound weird. Yes, myself and Gj love pavakkai/bitter gourd so much especially if it is roasted or fried. I have already posted crispy bitter gourd fries recipe. I am glad that many of you liked it. This is a very similar recipe and goes well with sambar, rasam, buttermilk and curd rice. Serves. 2 persons
Bitter gourd/pavakkai (round slices) – 1 cup
Besan flour/kadalai mavu – 1 tsp
Corn flour/sola mavu – 1 tsp
Rice flour/arisi mavu – 1 tsp
Chilli powder – 1 tsp
Jaggery/vellam – 1 tsp
Tamarind – small gooseberry-sized
Oil – 1/2 cup
Salt – as desired
Note. The ingredients shown will vary with the original quantity.
1. Wash and cut pavakkai into round slices. Discard its seeds. In a pan, add tamarind juice and pavakkai pieces along with little salt. Boil for 10 minutes or until the tamarind juice had been absorbed well. If there is any leftover tamarind juice, just drain it.2. In a mixing bowl, add besan flour, corn flour, rice Flour, chilli powder and little salt. Add little water and combine well. Then add the cooked pavakkai pieces to the mixture.3. Coat the pavakkai slices well in the mixture. Heat oil in a pan and fry the pavakkai pieces until golden brown. Finally, add a teaspoon of jaggery to the pavakkai pieces and give a quick stir.Now, pavakkai roast is ready! Serve with rasam, sambar and curd rice.
