Pineapple rice – this dish has everything: tropical, spicy, sweet, savory and satisfying flavor. I can confidently say that this pineapple rice tastes absolutely delicious.
Whenever I buy pineapple, this is the first recipe I would make. Pineapple fruit has intense sweetness, but this dish is tossed with some spices that gives this rice plenty of flavor and a nice spicy kick. This dish is a nice balance of two opposites: sweet and spicy. It would be just like having a tropical fiesta.
This exotic pineapple rice comes together pretty simple. All it takes is less than 15 minutes if you have cooked rice in hand. At the end, cooking the rice at high flame is a must. It would seal in all the natural flavors of this golden fruit and leave your rice with a subtle crispness. Interesting, na?
Pineapple rice looks quite tempting and you can pair this with some spicy curry or raita. Pineapple rice needs relatively simple ingredients and often available at home. It is quite different to other variety rice dishes.

Rice (cooked) – 1 cup
Pineapple (cut into small pieces) – 1 cup
Onion (chopped) – 2 tbsp
Garlic cloves/poondu – 3 nos.
Chilli powder/milagai thool – 1/2 tsp
Sukku podi/dry ginger powder – 1/4 tsp
Pepper powder/milagu thool – 1/2 tsp
Coriander leaves/kothamalli (chopped) – 3 tbsp
Mint leaves/pudina (chopped) – 3 tbsp
Olive oil – 1 tsp
Salt – as required
Note. The ingredients shown will vary with the original quantity.
1. Heat oil in a pan, and add the chopped onion. Once onion turns transparent, add garlic cloves. Fry for two minutes.2. Add pineapple pieces and stir well. Cook for two minutes.3. Add coriander leaves and mint leaves. Stir well until the leaves shrink. Then add chilli powder, dry ginger powder and salt. Stir well and cook for a minute.4. Add very little water say less than 1/4 cup of water. Cook well for three to four minutes. Add the cooked rice and stir well.5. Lastly, add pepper powder and cook the rice in high flame for 10 to 15 seconds. Switch off.Now, pineapple rice is ready! Serve hot with raita or gravy.
