People make sarson ka saag dish often during winter, as mustard saag is usually available at markets during winter season.
Sarson ka saag is made with a combination of greens like spinach, bathua, radish or fenugreek leaves. In my recipe, I have used spinach and mustard greens combination. Mustard leaves tastes mildly bitter so to combat the bitterness, we cook sarson ka saag along with other greens. I get spinach here very easily, so I have used only spinach.
Once sarson ka saag is cooked, it would taste delicious with the flavors from all the greens. You ca serve sarson ka saag hot with makai ki roti by topping it with a spoonful of butter or ghee or cream.

Mustard leaves/sarson ke latte (washed and chopped) – 5 cups
Spinach/palak (washed and chopped) – 5 cups
Onion (finely chopped) – 1/2 cup
Green chillies (chopped) – 1 and 1/2 tbsp
Coriander-cumin seeds powder/daniya-jeera powder – 1 tsp (optional)
Turmeric powder/haldi – 1/2 tsp
Chilli powder – 1 tsp
Salt – as required
Oil – 1 tbsp
Cumin seeds/jeeragam – 1 tsp
Garlic/lehsun (finely chopped) – 1tbsp
Ginger/adrak (finely chopped) – 1 tbsp
Asafetida/hing/perungayam – 1/4 tsp
Note. The ingredients shown will vary with the original quantity.
1. In a wide-bottomed pan, boil water and add mustard leaves, spinach and green chillies. Cook on high flame for 4 to 5 minutes. Stir well.2. Strain it using a strainer, and wash it in cold water immediately. Drain well again. Transfer the green mixture to a mixer. 3. Grind it coarsely using 1/2 cup of water and set aside. In a non-stick pan, heat oil and add cumin seeds. Once cumin seeds splutter, add garlic, ginger and asafoetida. Saute on a medium flame for 30 seconds.4. Add onions and again saute on a medium flame for 2 minutes. Now add the greens mixture and give a quick stir.5. Add turmeric powder, chilli powder, coriander-cumin seeds powder, and salt. Mix well. Cook on medium flame uncovered for 2 to 3 minutes while stirring occasionally. Switch off.Now, sarson ka saag is ready! Serve with makki ki roti with a spoonful of ghee or butter or cream.
