Schezwan noodles is a popular Indo-Chinese recipe. I had schezwan fried rice and noodles for the first time during my college days. It was very spicy, yetI liked its flavor.
The only time consuming part is to cut the veggies in thin strips. Otherwise, it is very easy to make schezwan noodles.The chillies and garlic in schezwan sauce add extra flavor to the noodles. Noodles lovers will get lured to the flavor of this schezwan noodles.
If you would like your noodles to be less spicy, reduce the red chillies while making your homemade schezwan sauce.

Noodles – 1 packet(200 gms)
Carrot, beans, cabbage, peas (chop into thin strips) – 1.5 cups
Garlic (chopped) – 2 tsp
Spring onion (white part) – 1 tsp
Spring onion (green part) – 2 tsp
Schezwan sauce – 1 and 1/2 tbsp
Pepper powder – 2 tsp (optional)
Salt – as required
Oil – 1 tsp
1. Bring water to boil. Add a teaspoon of oil, salt and noodles. When noodles turn soft, switch off. Make sure it does not turn mushy. Rinse the noodles in cold water and then drain the water. Set the noodles aside.
2. In a wide-bottomed pan, heat a teaspoon of oil. Add schezwan sauce and saute until the raw smell of the sauce goes away.3. Now add garlic and white part of spring onion. Saute for a minute. Now simmer the flame and then add the vegetables. Saute for few minutes.
4. Once the vegetables are cooked, add salt and pepper. Give a quick stir, and add the noodles. Toss well.
5. Finally, add the green part of spring onions and give a quick toss.
Now, schezwan noodles is ready! Serve hot with your choice of side dish.
