I wanted to post some Mexican recipes in my blog. I’ve been thinking about it for the past one year but something or the other kept me busy. Earlier I posted Chicken Taquitos, Guacamole, Tortilla Chips recipes. Now I am lining up some Mexican recipes and planning to post it here soon.
I make Burrito often, as we love Burritos so much. We have it at least once a week from Chipotle. For some reason, I like vegetarian Burritos compared to Chicken Burritos. I always felt it is a cumbersome task, don’t know why. My friend Vanessa is an expert in making Burritos, and she taught me how to make burritos in detail.
In order to make Burritos, we need to make Spanish Rice first. Usually, this Spanish Rice is served with many Mexican dishes like Enchiladas, Tacos, Toastadas etc. If you learn to make this Spanish Rice, then you can make serve it with many recipes.

Onion (chopped) – 1 no.
Garlic Clove (minced) – 1 no.
Medium or Long-Grain White Rice – 1 cup
Vegetable Stock or Chicken Stock – 1 and 1/2 cups
Tomato Paste – 1/2 cup
Salt – as required
Oil – 1 tablespoon
Note. The ingredients shown will vary with the original quantity.
1. Heat oil in large pan on medium heat. Add the rice and stir it well. When the rice turns light brown, add the onion and cook for another three minutes.
2. When the onions turn soft, add the tomato paste and salt. Stir well and add the stock.
3. When it begins to boil, add garlic cloves. Simmer the flame, cover the pan, and cook for 15 to 25 minutes. Once the rice is ready, just fluff it with fork. Remove from heat and let sit for five minutes.
Now, Spanish Rice is ready! Serve warm with your desired Mexican dishes.
