During my childhoods days, mushrooms was not a common ingredient in indian cooking. Nowadays they are so popular that several farms have been developed for their cultivation. They are a great source of minerals and vitamins.
I learned this recipe from chef venkatesh bhatt on his television show. It seemed to be simple and gave it a try. My family just loved it. As chef suggested, I served this dish with olive tempanade, but I think it will go well with tomato ketchup too. Just a gentle warning! This dish will go fast, so I recommend making more than you think you need.
I know thanksgiving is approaching, and I promise this dish will be a signature dish and greatest hit. Stuffed mushroom is quite simple to assemble, but big on flavor. You just have to get your potatoes cooked and mashed. The mashed potatoes keeps the stuffing super moist.

Mushroom – 2 cups or 500 gm
Potato (boiled, peeled and grated) – 1 or 100 gm
Paneer (grated) – 1/4 cup or 100 gm
Chilli powder/milagai thool – 1 tsp
Garam masala powder – 1 tsp
Coriander leaves (chopped) – 2 tbsp or 20 gm
Green chillies (chopped) – as required
Cashew nuts (chopped) – 6 or 10 gm
Almonds (chopped) – 6 or 10 gm
Pistachios (chopped) – 6 or 10 gm
Salt – as required
Olive oil – as required
Note. The ingredients shown will vary with the original quantity.
1. Boil water in a pan, and add mushrooms and salt. Close the lid, and cook for 4 to 5 minutes. Once the mushrooms are cooked, strain the water and show mushrooms under cold running water. In a large mixing bowl, add mashed potatoes, green chillies (optional), almonds, cashew nuts, pistachios, paneer, coriander leaves, chilli powder, garam masala powder, potatoes and salt.2. Mix well. Now, remove the stock of the mushrooms. Discard the stock and set the mushrooms aside.3. Now fill the mushroom cap with the potato mixture. Do the same for the remaining mushrooms.4. Heat oil in a tawa. Cook mushrooms in low flame until they turn golden brown.Now, stuffed mushrooms is ready! Serve it with olive tapenade or tomato ketchup.
