Tomato soup recipe, how to make tomato soup
When it comes to vegetarian soup recipes, I like tomato soup so much. When I go to surguru hotel at Pondicherry, I would always order tomato soup. I like it more because of its creamy and rich flavor. Even when I got married, the first soup that I tried was tomato soup. It came out very well even when I tried it for the first time.
Most of the times, I would toast the bread pieces and garnish the soup using them. For this post, I thought I will make tomato soup without adding toasted bread pieces. The tomato soup tastes very delicious by itself. There are several versions of tomato soups, and you can also cook this soup using microwave. Hope you all like this version of tomato soup.
Tomatoes – 6
Onion (small, finely chopped) – 1
Ginger garlic paste – 1/2 tsp
Pepper powder – 1 tsp
Butter – 1 tbsp
All purpose flour/maida or cornflour – 2 tsp
Sugar – 1/2 tsp
Salt – as required
Oil – 1 tsp
Note. The ingredients shown will vary with the original quantity.
1. In a saucepan, add enough quantity of water and tomatoes and bring it to a rolling boil. The tomatoes’ skin will shrink after 10 minutes. At this point, switch off the stove and drain the water. Once the tomatoes are cooled down, peel its skin.2. Now grind the peeled tomatoes into fine puree.3. Heat butter in a pan and then add finely chopped onions. Saute for a minute and add ginger garlic paste. Now saute for one more minute.4. Add corn flour and saute for two minutes. Now drain the tomato puree through a strainer.5. Add four cups of water and boil it. Once iT comes to a rolling boil, add pepper powder, salt and sugar. Boil for five minutes or until the soup thickens.Now, tomato soup is ready. Serve hot. If you wish, you could also add one tablespoon of fresh cream. Top with bread croutons or serve with golden roasted bread toast.
- You can substitute corn flour instead of all purpose flour/maida.
- Instead of finely chopped onions, you could add onion puree.
- You can use a normal strainer instead of a fine strainer because we need to have tomato pulp in the soup too.
