Tomato kuzhambu recipe, thakkali kuzhambu. An easy and delicious kuzhambu made with ripe tomatoes and few spices.
Heat oil in a pan and saute onions for two minutes. Then add cumin seeds and coriander seeds. Saute for a minute. Add red chillies, curry leaves, tomatoes and garlic.
When tomatoes turn soft, add coriander powder, cinnamon, clove, and poppy seeds. Saute for a minute.
Add coconut pieces and saute for a minute. Switch off.
Transfer the mixture to a blender, add little water and grind until smooth. Set aside.
Heat oil in a pan, and let the mustard seeds splutter. Add chopped onions and curry leaves. When onions turn transparent, add tomatoes and saute for a minute.
Then add the ground mixture, little water and salt. Stir well and cook for 10 minutes or until the kuzhambu thickens. Now, tomato kuzhambu or thakkali kuzhambu is ready!
